3½ oz clarified lacto-fermented tomato juice
1½ oz basilic infused-vodka
½ oz clarified lemon juice
¼ oz red bell pepper syrup*
Few drops of soy sauce (to taste)
Add all ingredients to a highball glass with ice and stir. Garnish with thyme and a little of eggplant and parmesan compote. Enjoy.
Ice
* red bell pepper syrup:
1 red bell pepper, chopped and de-seeded
8 ounces water
3/4 cup sugar
Combine all ingredients in blender and blend on low for about 30 seconds. Let sit overnight, then strain out the pepper.
